Directions

1Ether steam cauliflower or boil it in the salted water for about 2 minutes. Drain, transfer to a bowl or a jar.

2Whisk together vinegar, olive oil, finely chopped red onions, and mustard. until emulsified. Season with salt and pepper. Drizzle vinaigrette over warm cauliflower, and add capers and parsley. Stir to combine.

3Cover, and refrigerate overnight or up to 1 day. Serve chilled or at room temperature.

Ingredients

2 large head cauliflower (about 2 pounds), cut into small florets

1/3 cup white-wine vinegar

1/3 cup extra-virgin olive oil

1/2 cup finely chopped red onion

1 tsp Dijon mustard

2 tbsp brine-packed capers

1 tbsp chopped fresh parsley
